Winter Celebration of Fermentation

Pecora Dairy and Moonacres have joined together to produce an event dedicated to one of the oldest and most interesting ways to preserve food - fermentation. Indulge in the full range of Pecora Dairy cheesees, matched with a flight of leading Australian whiskey’s. Interspersed through the pairings, will be Moonacre’s own fermented meats and seasonal vegetables. Join us for this unique event!

Cheese Making and Appreciation Masterclass

Join Southern Highlands artisan cheesemakers Michael and Cressida McNamara from award winning Pecora Dairy for a day of fun and relaxed hands on cheesemaking. While we wait for our cheese, there will be a masterclass in sensory cheese analysis where you will step through a tasting of the world’s best cheeses matched with wines.

You will take make and take home Blue Cheese, Persian Feta and Mozzarella and be given recipes to replicate at home. Price includes some cheese baskets to get you started. Held in a state of the art hospitality facility with catered morning tea and lunch and led by industry professionals, you will be treated to a truly indulgent, fun and informative day.
